Meet our executive chef.

Corey Seigel almost became a musician rather than a cook. However, once he got a taste for the kitchen, he never left. With a five-week menu schedule—and no repeats—he and his staff are constantly in motion.

Background

Chef Corey attended the world-renowned Culinary Institute of America. Before coming to Meadow Ridge, he worked at country clubs, restaurants and fine hotels and owned his own consulting business.

His Goal

Chef Corey says many of the residents have eaten at some of the finest restaurants in the world and have high expectations. His goal, he says, is “meeting and exceeding” those expectations.

Jimmy Misbach

Meet our director of dining services.

Jimmy Misbach leads the dining services team at Meadow Ridge that is responsible for serving over 200 residents each day.

His Philosophy

Jimmy’s philosophy is “Just say yes.” He and his team try to accommodate all food requests. “If it’s within reason, we’ll do it,” he says. “Our staff goes above and beyond to make sure our residents get what they want."

His Style

Jimmy acts as coach and leader to his team, most of whom have restaurant experience. Working at Meadow Ridge is more rewarding than working at a typical restaurant, he says. “We know we make a difference every single day.”

An emphasis on farm-to-table cuisine for local flair and elevated gourmet flavors.

Our commitment to the greater Redding area continues with support of local farms and farmers. We source local produce and ingredients from Ambler Farms, Avril Farm, Nodine's Smokehouse and our very own campus farm, which features vegetable gardens and over 30 varieties of fruit trees.
